Fresh Watermelon Salad

I was invited to a dear friend's place for dinner one evening and she always surprises me with quick and tasty salads each time! This time was no different as I dived into a bowl of fresh, cool and lip-smacking watermelon salad. A blessing in disguise was it was absolutely easy and quick to make and can add that dash of colour to your dining table the next time you prop it! Here goes the quick recipe:

COOL WATERMELON SALAD
Prep Time: 15 mins | Cook Time: - | Servings: 4-6

Ingredients
  1. Watermelon - Cut in cubes (de-seeded) about 4 cups
  2. Capsicum - 1, chopped into thin ½ inch slices
  3. Onion - 1, chopped into thin ½ inch slices
  4. Ground nuts - ½ cup, Roasted and coarsely ground
  5. Sesame seeds - 1 tablespoon, roasted
  6. Chopped coriander or parsley - To garnish 
  7. For seasoning:
    • Olive oil - 2 tablespoons
    • Soy Sauce - 2 teaspoons
    • Pepper powder - ½ teaspoon
    • Salt - To taste (usually soy sauce has salt)
Procedure:
  1. Mix watermelon cubes, and sliced capsicum and onion into a salad bowl
  2. Mix all the ingredients of the seasoning in a small bowl and allow it to rest for a couple of minutes
  3. Add the seasoning to the salad bowl and refrigerate it
  4. Just before you serve, add the groundnuts and sesame seeds along with the coriander garnish
  5. Ensure the salad is cool before it is served
