Colourful Capsicum (Bell Peppers) Salad

A tasty, sumptuous salad can be a great conversation starter at dining tables during meals. And if it is a combination of great colours, fine taste and freshness, I bet even kids wouldn't mind digging into it! I dug out this recipe a while ago and when I first tried it, not only did it look colourful and gorgeous, but it also became the most popular recipe for parties and potlucks at home! 

COLOURFUL BELL PEPPER (CAPSICUM) SALAD
Prep Time: 15 mins | Cooking Time: - | Servings: 4-6

Ingredients:
  1. Red, Yellow and Green Capsicum - 1 each, cut into small squares
  2. Cherry Tomatoes - 1 cup (cut into halves) or de-seeded regular tomatoes chopped
  3. Chopped Spring Onions - ½ cup
  4. Black Olives - ½ cup
  5. Cubes of Feta Cheese or Regular/Flavoured Cheese - ½ cup (About 3 Britannia Cheese Cubes)
  6. For seasoning:
    • Olive Oil - 3 Tablespoons
    • Lemon Juice - 1½ - 2 Tablespoons
    • Herbs (if you like) - 1 Teaspoon
    • Salt & Pepper - to taste
    • Tomato Ketchup - 1-2 Teaspoons
Procedure:
  1. Clean all the vegetables in warm salt water before you cut them
  2. Mix all the vegetables, olives, cheese in a salad bowl 
  3. In a small separate bowl, combine all the ingredients of the seasoning and mix it well. Allow it to rest for a few minutes
  4. Add the seasoning to the salad bowl and mix well
  5. Let the salad cool and rest for sometime and the colourful, attractive and tangy salad it is ready to serve!
