After a binge weekend, it is always wonderful to start your week on a fresh, healthy note - drive those blues
away with some light and fresh salad! Opened my refrigerator to find some slender, fresh European cucumbers and green capsicum and thought why not mix the two - combining coolness of the cucumbers with the crispy, spicy flavours of capsicum on a warm afternoon seems simply perfect! Usually this recipe combines only cucumbers and capsicum, I had a few cherry tomatoes and decided to throw in some for a dash of colour and tang.
Here's what you can do:
CUCUMBER & CAPSICUM SALAD
Prep Time: 10 min | Cook Time: - | Servings: 4
Ingredients:
- Cucumber - 1-2 nos
- Capsicum - 1-2nos medium size
- Cherry Tomatoes - 7-8 nos (optional)
- For Seasoning:
- Olive Oil - 1 tablespoon
- Honey - ¼ teaspoon
- Lemon Juice - 2 teaspoons
- Mustard paste or mustard sauce - 1 teaspoon (optional if you dislike the pungent taste of mustard)
- Salt and Pepper - to taste
Preparation:
- Cut cucumber and capsicum into big cubes or chunks and slice cherry tomatoes into halves and mix in a bowl
- Mix all the ingredients for the seasoning and let it rest for a few minutes
- Add the seasoning to the veges and mix well
- Let the salad rest in the refrigerator for sometime before you serve
